This peanut noodle dish is great as a side dish. It's super easy and takes about 15 to 20 minutes to make. So yes... basically, the amount of time you need to boil, drain/ rinse the noodles, and toss with sauce.
Sometimes, if I'm really lazy, I just top the noodles with a hard boiled egg, some julienne cucumbers, green onions, and an extra dollop of hot sauce on the side, and call it a meal.
Boil Noodles According to Packaged Instructions

These are my favorite Asian noodles pictured above (WuMu Brand of wide dry noodles as I discussed previously in this blog post) because there's no preservatives, but still has a long shelf life. If you can't find this, then any type of your favorite Asian noodles will do. Even spaghetti noodles are fine too...
Make the Sauce while Noodles are Boiling
Microwave peanut butter to soften and add water Mix peanut butter with water until smooth Add the remaining sauce ingredients and mix
Toss Noodles with Sauce and Serve Garnished with Green Onions
Yields 2 to 3 servings
Ingredients:
- 6 oz WuMu brand dried wide noodles (or any kind of Asian wheat flour noodles, even spaghetti noodles if that is all you have)
- 4 T chopped green onions (about 2 stalks green onions)
- Half an English Cucumber, julienned (optional)
- 2 hard boiled eggs, each cut in half (optional)
Ingredients for Sauce:
- 4 T creamy peanut butter
- 3 T water
- 2 cloves garlic, very finely minced
- 3 T soy sauce
- 1 t sesame oil
- 1 T sushi rice vinegar
- pinch of sugar
- 1 t chili oil (optional, more if desired)
Procedures:
1. Boil noodles according to packaged instructions.
2. While the noodles are boiling, add the peanut butter to a bowl. Microwave for 15 to 30 seconds to soften. (This will help make the sauce smoother.) Then add in the water and mix until a smooth paste is formed. Add the remaining ingredients for sauce to the bowl. Mix well and set aside until the noodles are done.
3. When the noodles are done, rinse and drain noodles. Return noodles to the pot. Add sauce and toss to combine. Turn on the heat and heat only until slightly warmed through (about 1 minute). Do not heat until the sauce is bubbling or the noodles will be gummy. You just want the noodles to be ever so slightly warm.
4. Serve noodles garnished with green onions. Top with hard boiled eggs and cucumbers if using. Add extra chili sauce on the side if desired.
