Cheese Corn

 


Sorry for not posting recently. Caught the flu after traveling that literally knocked me out, and I was bed bound for a week... I'm still trying to recover from it, but WOW, I don't remember being this sick --ever.

Here's a recipe for a vegetarian side dish that I made yesterday for Thanksgiving that's really tasty and so easy to make. It's actually an appetizer that is commonly served in Korean restaurants, but I thought baked corn with gooey cheese was an appropriate decadence for Thanksgiving dinner. Plus, you can assemble the dish the day before Thanksgiving, refrigerating the dish prior to the baking step. Then, on the day of the feast, pop it in the oven to get the cheese nice and bubbly, and for the dish to be heated through. Serve immediately for the best 'cheese goo' factor!

Saute onions, corn and peppers with salt, pepper and sugar

Drain off any excess liquid

Transfer to an oven safe dish

Add mayonnaise and mix

Top with mozzarella and bake at 375F for 15 minutes until cheese is bubbly

Yields 8-10 side servings

Ingredients:

  • 2 bags of frozen corn kernels (16 oz bags), thawed
  • 1 roasted red bell pepper, diced
  • ½ yellow onion, diced
  • ½ t salt
  • ¼ t pepper
  • 2 T sugar
  • ½ c mayonnaise
  • 4-6 oz shredded mozzarella cheese

Procedures:

1. In a pan, add the thawed corn, diced red pepper and diced onions. Add salt, pepper and sugar. (If you don't have jarred roasted red peppers where you live, a regular fresh red pepper is perfectly fine.)

2. Cook on medium heat until the onions are translucent.

3. Transfer the mixture to a shallow baking dish, leaving behind any accumulated liquid. (Discard liquid that is in the pan, because you don’t want soupy cheese corn.)

4. Add mayonnaise to the baking dish and mix thoroughly. Then spread the corn, pepper, onion mixture evenly in the baking dish.

5. Top with mozzarella cheese.

6. Bake at 375 F for 15 min or until the cheese is melted and bubbly, and the dish is warmed through. Serve immediately.
