With the summer heat in full force, the last thing you want to do is stand over a hot stove. These smoked salmon rolls require no cooking and are refreshing and so pretty! You can also make it a bit more substantial by adding a lettuce leaf to the roll as well (not pictured here).
Yields 4 to 5 appetizer servings
Ingredients:
- 2 sheets of roasted nori for sushi (8 by 8 in squares)
- 1/2 pound sliced smoked salmon
- Half a cucumber cut into long match sticks
- 2 stalks of green onions tops cut to 8 inches
Procedures:
- Place a sheet of parchment paper on a cutting board.
- Lay a sheet of nori on top of the parchment paper.
- Arrange half the smoked salmon in a single layer on one end of the nori.
- Place green onions and cucumbers on top of the salmon about 1 inch from the edge.
- Using the aid of the parchment paper, roll the nori into a tight roll.
- Repeat steps 1-5 with the other nori sheet.
- Cut each roll into 8 pieces using a sharp knife. Makes 16 pieces.
