Coleslaw without mayo?
Yes!
I hate coleslaw with gloppy mayo. This recipe has none of that. It's light and refreshing served with BBQ ribs, BBQ pulled meats, or on top of a taco or fusion burger.
It does require that you make it several hours ahead of time for the sauce to "marinate" the cabbage and draw out some of the water, but this is perfect for a dinner party where you make this ahead of time and and can spend time with your guests instead of in the kitchen!
Yields 8 servings
Ingredients:
- 1 head of cabbage shredded
- 2 carrots julienned
- 1 small onion diced
- 1 green bell pepper julienned
- 1 apple cored and sliced to match sticks
- ½ c cider vinegar
- 2 T white sugar
- ¾ t salt
- ½ t pepper
- cilantro for garnish (optional)
Procedures:
- In a large bowl, mix together above ingredients.
- Allow to marinate for several hours in the refrigerator, tossing periodically.
- When ready to serve, drain off liquid collected at the bottom of the bowl. Garnish with cilantro (optional)
