Sauteed Kale and Ham

 


Super easy, yet delicious, kale sauteed with smoky ham and garlic makes for a healthy side dish. Just make sure you wash the kale leaves thoroughly, as grit and dirt can collect and stay lodged on the curly leaves.

A quick rinse won't cut it here, folks.

Also, in this kale and ham recipe, discarding the tough stems is a must, or else your jaw will get a good work out...




Yields 3 servings

Ingredients:

  • 1 large bunch curly kale (about 1 lb) tough stems removed, leaves roughly chopped
  • 2 oz (about ¼ c) smoked ham, chopped
  • 1 large garlic clove, chopped
  • 1 T olive oil

Procedures:

1. Wash the kale leaves thoroughly by submerging the kale leaves in a deep bowl of cold water and rub each leaf with your fingers to dislodge any dirt. Rinse and drain kale in a colander. Then remove the kale leaves from their sturdy stalks by cutting a narrow “V” into each leaf. Discard stalks. Roughly chop kale leaves and set aside.

2. In a pan, heat olive oil and saute the ham until the ham has developed some browning (about 2 minutes).

3. Add chopped garlic and continue to saute until garlic is fragrant (about 1 minute).

 4. Add the kale leaves and saute until the kale is just tender (about 4 minutes). Serve immediately.
