Sweet and Sour Pork Chops

Sweet and sour boneless pork chops are an easy week night meal that can be made in under 30 minutes.

All that is required is to sear marinated boneless pork chops on both sides. Then in the same pan, dump in the ingredients for the sauce, and return the seared pork chops to the sauce. Simmer for approximately 5-10 minutes (depending on how thick your chops are) until chops are cooked through, garnish with chopped green onions, and dinner is ready!

(PS: There's no fried batter here, so don't expect this dish to be like the sweet and sour pork at Panda Express.)

Yields 4 servings

Ingredients:

  • 2.5 lbs boneless pork chops (about 8 small chops)
  • 1 t salt
  • ½ t black pepper
  • ½ t garlic powder
  • ½ t ginger powder
  • 2 T Hoisin sauce
  • ¼ c honey
  • ¼ c white distilled vinegar
  • 3 T ketchup
  • ½ c water
  • 1 t corn starch
  • 1 T olive oil

Procedures:

1. Marinate pork chops overnight in the fridge with salt, pepper, garlic powder and ginger powder.

2. The next day, sear pork chops in a nonstick pan, coated with 1 T olive oil, until brown on both sides. Transfer pork chops to a plate.

3. Add Hoisin sauce, honey, vinegar, ketchup and water to the pan. Mix and heat until simmering. Add the pork chops and the juices back to the pan and continue to simmer under medium heat until the chops are cooked through (about 5-10 minutes).

4. Add a slurry of 1 t cornstarch and 2 T water, mix, and continue to simmer until the sauce thickens.

5. Serve garnished with green onions.
