Turkey Kimchi Burgers

An easy way to use up leftover kimchi is to chop the kimchi up and mix it with ground turkey. The kimchi and kimchi juice have so much flavor already that you don't need to add much else to the meat for the burger to taste yummy. Plus the kimchi juice keeps the turkey burger nice and moist even when it's lean turkey.

Here pictured above, I served these turkey kimchi patties on this plain unfilled carrot bao bun with some baby spinach, Japanese pickles (takuan), sriracha sauce, and a thick slather of a caramelized onion spread. But you can use whatever buns you have on hand and your own favorite condiments. You can even serve the patties as a side dish (ban chan) with some rice.


Use about 1 cup kimchi

Chop up kimchi

Mix all ingredients together

Form into patties

Pan fry on each side until browned and cooked through

Yields 7 to 8 servings (about 14 to 16 small patties or 8 quarter pound burgers)

Ingredients:

  • 2 lbs ground turkey (93% lean)
  • 1 egg
  • 1 c chopped kimchi
  • ¼ c kimchi juice
  • 1 T soy sauce
  • 3 T cornstarch
  • 1 t sugar
  • oil for pan frying

Procedures:

1. Mix all ingredients together in a bowl

2. Form into round patties

3. Add some oil to a pan, and pan fry on medium low until both sides are browned and cooked through. (About 4 minutes on each side) Serve on a bun with condiments of your choice or if you made mini patties, serve as a korean side dish with rice.
