 Ground Turkey with Black Bean Sauce



This dish is so easy with the help of store bought black bean sauce, that I make this a lot--especially when I was still working. I like the Lee Kum Kee brand of black bean and garlic sauce (pictured below). The sauce is quite salty, so you do have to watch how much you add into your dish, but I like it because it's convenient to have on hand to make a quick and flavorful dish on a weeknight. You can find the sauce in the condiments/sauce aisles of your Asian supermarket. I've even seen it at my local Safeway and Lucky's!


This dish comes together quick, so it's best to measure out all your ingredients for the sauce ahead of time so you can pour it over the ground turkey after the turkey starts to brown in the pan. And once the sauce has thickened, add in the peas and stir until peas are heated, and then serve over rice. So easy. So good.

If you are all "turkeyed out" over Thanksgiving, then feel free to use ground beef instead, but I often use ground turkey cuz it's a bit healthier and lower in fat.

Mix all ingredients for sauce in a bowl and set aside.

Pour sauce over turkey and stir til thickened

Add peas, and stir til peas are heated through. Serve over hot rice.


Yields 5 to 6 servings

Ingredients:

  • 1.25 lbs ground turkey, 93% lean
  • 1 T olive oil
  • 2 T dried chopped onions
  • 1 c frozen peas
  • chopped scallions for garnish (optional)
  • 3 hard boiled eggs, cut in half, for garnish (optional)

Ingredients for Sauce:

  • 1/3 c black bean garlic sauce (Lee Kum Kee brand)
  • 1 ½ c water
  • 1 T cornstarch
  • 1 t sugar

Procedures:

1. Mix all the sauce ingredients in a bowl and set aside.

2. Add olive oil to a pan and brown the ground turkey over medium high heat.

3. When the turkey is browned, add the dried chopped onions and pour in the sauce. Stir and cook until the sauce starts to thicken. If the sauce is too thick, add some water to thin it out.

4. Lastly, add in the frozen peas and continue to stir and cook until the peas are heated through.

5. Serve over hot rice, garnish with green onions and half a hard boiled egg if using.
