Halloween Mochi Brownies

 


I saw this emmymade video of mochi brownies last year and have had it bookmarked to try because I just LOVE mochi. She embedded a piece of mochi inside brownies. Genius!

I made these into Halloween treats by making them bite sized in mini muffin tins, and plopping the mochi as "ghost" blobs in the brownie batter. After it's baked, decorate each "ghost" with two round sprinkles for the eyes.

This comes together pretty easily, and in under an hour, as the mochi is microwaved to cook, and they take only 15 minutes to bake. To make it even easier, you can use a boxed brownie mix like Emmy did, but I chose to make my own brownie batter.

So first, I mixed up the mochiko flour with water, sugar, and a pinch of salt and let it cook in the microwave while I prepped the other materials.

While the mochi was in the microwave, I generously greased a mini muffin tin with butter and set it aside.

And when the first wave of mochi microwaving was done, I placed the mixing bowl with the stick of butter into the microwave to melt while I stirred up the partially cooked mochi to get it ready for a second round of microwaving. That way, while the mochi finishes cooking in the microwave during the second round of mochi microwaving, I could make the brownie batter.

Recipe inspired and adapted from Emmymade Mochi Brownies

Ingredients for mochi:

  • 1 c mochiko
  • 1 c water
  • 1/3 c sugar
  • ¼ t salt

Ingredients for brownies:

  • 1 stick of butter (½ c butter)
  • ¾ c granulated sugar
  • 2 eggs
  • 1 t vanilla
  • 1/3 c unsweetened cocoa powder
  • ¼ t baking powder
  • ¼ t salt
  • ½ c all purpose flour

Ingredients for decorating:

  • 40-44 Round sprinkles

Procedures:

  1. Add mochiko, water, sugar and salt to a microwave safe bowl. Mix until there are no lumps remaining.
  2. Microwave at medium power for 5 minutes. (My microwave’s highest power is 10. So I set the power to 5.)
  3. When the timer is up, carefully take out the bowl and use a metal spoon to mix the cooked mochi. CAREFUL, the mochi is very very hot!
  4. Return the bowl to the microwave and microwave for 5 minutes more at power level 5. Mix again, and set aside to allow the mochi to cool a bit while you prepare the other materials.
  5. Generously grease a 24- mini muffin tin with butter and set aside.
  6. Microwave butter in 30 second intervals to melt. When fully melted, add ¾ c sugar to the butter and mix with a wooden spoon (no mixer needed). Then add the 2 eggs and mix. Add cocoa powder and vanilla and mix. Finally add the flour, salt, baking powder and mix until just combined. Do not over mix.
  7. Spoon the brownie batter into the greased muffin tins (I used a small cookie scoop for ease.)
  8. Top with the microwaved mochi. (I used 2 spoons to scoop the mochi into each muffin tin.)
  9. Bake in a 350 F preheated oven for 15 minutes. Remove from the oven and add in two round sprinkles for each mochi blob for the eyes of a "ghost". Allow to cool in the tins for 10 minutes. Then remove the brownies and cool on a wire rack. Enjoy! Any leftovers can be stored in an air tight container for 3 days.
