The other day, I made two jars of pickled daikon and carrots (recipe here).
And I've been waiting patiently for the pickles to develop their full flavor to make myself this Asian inspired chicken sandwich.
It's a sandwich of roasted chicken, a few slices of cucumbers and avocados, and a handful of pickled daikon and carrots tucked inside a green onion pancake and then topped with hoisin and sriracha sauce. (I cheated and used frozen green onion pancakes from the freezer section of my Asian grocery store [See photo below for my favorite brand]. If you can't find green onion pancakes in your grocery store, feel free to substitute with middle eastern flat bread, Greek pita bread, or a baguette.)
In fact, this is really really versatile. Feel free to substitute the avocados and cucumbers with other veggies of your liking, such as lettuce, onions, bell peppers, etc. Just don't substitute out the pickled carrots and daikon, as these pickles make this sandwich uniquely tangy, sweet and crunchy!
Pan fry straight from the freezer with a bit of oil and you have a nice crispy green onion pancake with a good chew in the middle. Sooooo sooo good! |
And even better with these sauces! But heck. Squirt Hoisin sauce on anything and I'll say it's yummy. Yes, I'm in LOVE with the sauce. |
Yields 2 servings
Ingredients:
- a quarter of a roasted chicken breast, sliced
- 1 small avocado, sliced
- ¼ of a cucumber cut into match sticks
- 2 green onion pancakes, cooked according to packaged conditions
- 1/3 c pickled daikon and carrots
- sriracha sauce
- hoisin sauce
Procedures:
1. Pan fry green onion pancakes according to packaged instructions.
2. Add sliced chicken, cucumbers, and avocados and top with pickled daikon and carrots.
3. Add hoisin sauce and sriracha sauce to taste.
